All the cereals have to be roasted and after this, everything is put together and sent to the mill for grinding. The mill grinds it into fine powder (tom brown). Not only is the tom brown used for porridge but also good for cooking special kinds of akple like dzenkple or appapransa. 

How to prepare tom brown porridge

Pour some amount of tom brown in a bowl, add water and mix well till there is no lump in the mixture. Put on a pot on stove, pour water inside and add some salt to it. Allow the water to boil very well and with a spatula or spoon in one hand pour in the mix tom brown into the boiled water as you stir. The stirring prevents lumps from developing in the porridge. If the water is too small than the mixture poured into it, it can thicken and form lumps so in this case add more water to the porridge to dilute it a bit. Allow to boil very well and add your sugar and then pour your portion in a cup and serve with bread.
