Corn sticks, locally referred to as atsififi
Never heard of cornsticks before? Worry not as this is just the right place to get an incredible guide on how you can make it in the comfort of your home and enjoy it at any moment. This is a snack made from corn flour and when made well, taste very great and makes a very crunchy sound whilst it is being eaten.
Ingredients required are:
corn flour
salt
sugar
There are different ways people go about the preparation of this wonderful delicacy but let's do this one I think is more convenient to do.
Pour some amount of corn flour into a bowl maybe 2 cups and add water to it. Mix into an even consistency, add salt and sugar and the water added must be enough such that it becomes liquidly. Put it on fire and stir as it boils to prevent the formation of lumps in it. As it boils for some time, take it off the fire and then add corn flour in small amounts as you stir with a spatula to thicken it into a solid. The stirring is very important to ensure that it mixes very evenly.
Bette still, the other way to go about this is to pour in water into a pot on fire, add salt and sugar, small amount of corn flour and allow to boil. Pour in corn flour when it starts boiling and cook it as akple. Pour it in a bowl and add some amount of corn flour to it and then mix well until it forms an elastic dough.

After it mixes well, form the whole mixture into a ball and allow it to cool a bit before rolling. Take a small part of the ball and roll it into either a thick or thin stick. Do this until all the ball is used and then the next procedure can be in place.
Now that all these have been done, we are ready to continue the process by frying our crunchy corn sticks (atsipipi).
Atsipipi is a Ghanaian language that is Ewe spoken by the Ewe tribe of Ghana. The oil to be used is coconut oil or any other oil but not palm oil. The roll of sticks can be left for some minutes to make them harden a little before frying so that it doesn't stick to the bottom of the frying pan or even break.
Pour enough oil into the pan and allow it to become hot before putting in the sticks. Put in a reasonable amount of the sticks and turn as it fries to ensure even frying. Fry till they turn deep brown and then you can remove them from the oil. Frying the remaining with care to prevent them from over-frying because the oil will become intensely hot.

After you are done, it can be served like that of if you are a lover of snacks then the addition of some soft drink will be a great combination. This crunchy food is very simple to make because the ingredients needed are very easy to get and doesn't require expert catering skills to do.
