It is indeed a wonderful and expeditious experience having the chance to travel to other locations distant from home because 'HOME SWEET HOME' does not have all the nice things the eyes could ever wish to view. Once again, Ghana is blessed with many diverse cultures with every single one possessing unique characteristics that interest foreigners as well as the local people alike. 

Food which is one of the basic needs of humans can be seen in different tastes among the various regions with very appreciable visual appeal as well. In fact, one of the simple foods that can be said to as trans-cultural can be 'BOILED PLANTAIN WITH KONTONMIRE STEW' and to make the sauce well enriched, an egg. The almost ripe plantain is used to prepare etor and to be talked more about here the boiled plantain. 


Well, plantain is one kind of food that is very abundant in its season and becomes a bit scarce when the season is out and it also affects the prices. Food wastage is one thing everyone especially farmers fight against because it is a very tough work to farm which gets food unto the table. To prevent wastage of plantain when it is very abundant and can be easily purchased by many, it is expedient to know the various dishes it can make for a varied taste and dish that will encourage its consumption even if it should be eaten two or three times a day.

Kontonmire is the leaf of the cocoyam plant and mostly it can be gotten in the market for your stew and even soup if you wish. To prepare the plantain, it is only a matter of removing the covering and then cutting it to a very good size and then boil. Add salt after it is almost cooked and then decant the water off the plantain.

Now the stew, there are many ways one can go about doing it but let me give this simple way to prepare your special kontonmire stew to serve with the boiled plantain. Wash the leaves very well and cut into small pieces and boil well. The stew can be prepared and then the boil kontonmire leaves added and allowed to simmer for some minutes to cooked well. Leafy vegetables offer a great source of vitamin C and vitamin A. The water left with the boiled leaves should not be thrown away but can be added to the stew to ensure wholesome consumption.
