Travel and see! This statement was indeed a truth to me when I visited Kumasi because, after a few days of my stay there, varieties of foods were available that I needed to taste. Think of the fufu, yam, cassava, kakro and now Etor. Ashanti Region of Ghana is a place of fertile farmlands where cocoa is planted in large plantations, banana, plantain, cassava, and a whole lot of foodstuffs that can come to mind. Plantain is one of the foods that can be in great abundance over there and it is just lovely to stay there and enjoy the goodness of food plantain can offer you. From backyard gardens to commercial plantations, like everywhere you pass in Kumasi, you will surely find a plantain plant and it tells of how important it is in the region.
Etor is one of the foods I came across which is prepared from plantain that has not overripe and in fact the taste of this food is something so captivating.
Curiosity made me find out exactly how this food is prepared and once you are here, continue reading to get all the information to also prepare some for yourself right in the comfort of your home.
What special ingredients are the requirements?
Woo! Worry not about ingredients at all because you only need plantain, egg and that is all that matters in the preparation of this food.
Plantain that has not overripe is the kind very suitable for preparing Etor. Get some like the ones shown above and all is set to start the process.
Get a sharp knife and remove the covering of the plantain for the boiling process. The size to cut the plantain to for boiling is left to whoever is doing the cooking to decide and maybe considering the size of pot or utensil being used. Take note that when trying to boil the plantain, there is no need to wash it before putting into the pot, just use very clean hands and even try not to touch it before it enters the pot. The reason being that it is very securely covered by its shield and so nothing has that chance to cause any kind of contamination except a part is spoilt and with that also, it needs only to be removed with a sharp knife.
You are done with this process, it is now boiled for some minutes about 10-15minutes durations and then salt is added in moderate quantity to make sure it taste really good. The pot is now lifted off the heat and strained to do away with the water. This is the stage of making the real deal. Get a bowl big enough and pour in the boiled plantain and with a tampoline or also known among the Ashanti's as eta, mash the plantain very well into very small lumps.
The image below shows what Etor looks like and it can be eaten with just a poached or boiled egg. Notwithstanding, roasted groundnut is also a very good compliment to this special food. Eat also with stew or ground pepper with some fried meat of fish to taste.
One thing worth noting about Etor is that, a person can perceive the food that he or she might eat in a large quantity but it only becomes impossible when a person attempts to eat it. The food looks delicious but a very small amount gets you easily satisfied and it calls for a lot of water to be drunk which means with just a small amount consumed, it can sustain for long hours. The secret behind this truth might probably be the fact that plantain is also highly a carbohydrate-rich food.
