Do you know there quite a number of meals or food kinds that can be prepared using beans?
Some of them are beans stew, rice and beans (waakye), beans apapransa (dzenkple), cooked beans etc. It is not a difficult task to cook beans but the kind of beans preparation to be discussed here is a rich one hence quite a number of ingredients are required but there are options to it that will you will be made aware of as you continue reading. Beans is such a food that a lot of people can say about produces a lot of gas in the stomach after consumption but there is a means someone told me can be used to curb this and as I practised it, it worked perfectly well.
After getting ready a well dried beans, separate the unwanted materials like stones, sticks, spoilt beans seeds out of it by picking them out. Soak beans in water for some minutes get rid of the gas it produces. Any mode of heat can be used in cooking the beans be it firewood, charcoal, gas etc.
Preparing the beans
Wash beans well, pour in a pot or saucepan and add enough water to it and set over heat like gas. Beans come in various varieties and some cook faster than others but if you want to fast track the cooking process, add salt petre to the beans and it will cook faster.
It can take a little more than thirty minutes for the beans to be well cooked depending on intensity of heat.
When the beans is soft or well-broken which is an indication that it is well-cooked, add salt and make sure to taste it to check the salt level because when the salt level is under required quantity or over, it will be difficult to eat.
The beans at this stage can be taken off the stove and maybe palm oil is poured on it small gari added for consumption but the kind of beans to be discussed here is a special kind.
So from this stage, the next thing to do is to add tomato paste, blended pepper, ginger, garlic, onion, palm oil or coconut oil or any other kind but do not mix oils. Add ONGA or MAGGI seasoning and allow to cook for about seven (7) minutes.
Taste to check the taste and make any necessary additions if there is the need!
Someone can just simply fetch some of the cooked beans and add some gari and then enjoy but another person may desire the addition of fried plantain, pear and even do away with the use of the gari.
If you want to go with the fried plantain, get some ripe plantain and cut into hot oil, fry until deep brown and add to the specially prepared beans.
This meal is a meal rich in vitamins, protein, carbohydrate among other food nutrients and due to this you must try it out if you haven't taken a bite of it. Cooked beans among the Ewes is called borbor but it is so surprising to me how popular cooked beans is in other parts of the country. In Kumasi and other regions it is known as gobe and many love it to the extent that we had to interrogate with individuals to know the reason their insatiable love and taste for gobe. Some of the people made it clearly known that it is very cheap and after taking it, it can sustain them for the whole day and they need only to be drinking water to be on the go. Despite how cheap it is, the hike in inflation all over the world has not spared beans but it doesn't hinder anyone from buying it because it is unavoidable.
Even though one major reason why the food is highly purchased is the fact that it does not cost much, the taste also propels and sustains the love for it. Some youths especially are so intrigued with the taste such that they move from one beans seller to the other to experience the differences in the tastes and finally get hooked up with one particularly seller with the most desirable taste who now becomes the customer as they mostly put it.
Others too like to have it prepared in their own house before they can eat it as there are some things people say about eating it among other people or elsewhere. There is one essential ingredient used in preparing beans that can make the entire food distasteful. This can be the quality of oil used. Palm oil is a major driving agent that adds to the quality of taste beans and so if the palm oil is not proper, it can spoil the aroma or the taste.
Another ingredient that can be responsible for an unpalatable taste is the kind of gari used. Gari is so essential in the consumption of beans so beans sellers specially and carefully select the type of gari to be bought for selling their beans. If attention is not given to this, the whole food will be somehow and it can drive away customers.
Which one is better? Cooking beans at home or buying cooked beans form outside.
Public health counsellors advise we cook food in our own houses before consumption because it is a way of protecting oneself. Anyway you go about it, just be careful about the safety of the food and that's cool. If maybe you would not like to cook beans the way it has been explained in this article and you would want to go with the simple method, then;
- After the beans is well cooked and salt added, take it off the stove and put a saucepan on the stove.
- Pour in palm oil or any other oil but do not mix oils.
- Cut and slice onions in the oil.
- Fry the onions until deep brown and take the pan off the stove. Add this to your portion of beans and add gari or eat with bread or even add to cooked plain rice.
