Preparing soup with Moringa Oleifera leaves | The procedure

 Yeah, it is amazing how wonderful a soup moringa leaves can make. In the village and most especially in households where the people know how to make use of the moringa plant, this soup is very common. This plant has the scientific name: Moringa oleifera and it happens to be a common plant even though not so common in some places especially in cities where trees are rare. These leaves have a good taste when it comes to their taste in stew and soup but not many might be aware of how great a soup they can be used for. This soup is consumed just like any other soup you can think of which means it is taken with banku, eba, boiled plantain, yam, potato and a lot more foods.

In this post, I want to express how I prepare amazing and tasty soup using moringa leaves. There are varieties of ways I can prepare this but for the images you see in this post, I will show you exactly how it was prepared. By the way, a few ingredients are needed but specifically, let me state the ones used for the images you see in this post. If you want to try this after reading the post, it is easy to follow and you can always make use of the ingredients you find depending on how rich you want the soup to be.  Let's get into it!

Ingredients

  • Moringa leaves
  • cooking oil
  • onion
  • pepper
  • tomato paste or fresh tomato
  • salt
  • fish
  • garden egg
  • spices, ginger, garlic etc.

Preparation method

First of all, after plucking the fresh moringa leaves, the leaves were removed from the branches to get rid of as much sticks as possible.

Fresh moringa leaves. As seen from this image, the hand is rubbed around the branch to get the individual leaves and eliminate as much sticks as possible. If not how tiring it is, some people try as much as possible to remove the leaves individually thereby completely avoiding the sticks.


The leaves with yellowish coloration or with some form of defects were carefully removed then the leaves were chopped with knife into smaller pieces. This makes it easier to cook and also adds to the attractiveness of the soup. The leaves now had to be washed thoroughly about two times before put over the fire to boil. Considering the flow of dust particles in the air everyday, it is very expedient to wash the leaves very well before boiling. The leaves can be washed in salt solution as well. 

The tomato, onion, pepper, ginger, garlic were ground and used to prepare stew. The stew is separately prepared of which the fish was added. The garden egg has to first be boiled before blending or grinding and then it is added to the stew. This isn't so rich but still the taste was great. The boiled moringa leaves was then added to the stew.

The soup was left to boil very well about some 10 minutes. Tasted and everything was just on point. What is left?

Moringa leaf soup is ready to be enjoyed. Banku is one of the popular foods people normally take with the soup. In addition, the moringa leaves are good for stews as well.
